This is an interesting paper on saturation in SiPM's that I came across 
a while ago:

which seems to explain why the saturation curves I've seen aren't quite 
as simple as throwing balls into boxes, which they say is because the 
pixels actually can sometimes fire twice within the time of the light 
collection.
